Gould Helps Open New Waterside Restaurant for Lakeside Casual Fair
The Gaithersburg Marriott Washingtonian Center announced today that Andrew M. Gould was named executive chef. Mr. Gould, an 11-year Marriott veteran, has already played an integral role in the opening of the Waterside restaurant that launched last week that features "comfort food with a twist" at a scenic lakeside location.
"Drew had an excellent mix of restaurant and culinary experience, so he was immediately our top candidate," explains Tom Gilliland, assistant general manager at the Gaithersburg Marriott Washingtonian Center. "We knew we would be launching the new restaurant, and working to increase customer satisfaction in all areas of food service. Drew has a history of doing that for other Marriott hotels so we were very interested in him from the beginning."
Mr. Gould created the Waterside menu that focuses on indigenous, seasonal ingredients. "I included several seafood dishes since we are located on a lake but with unexpected surprises," explains Mr. Gould. For instance, Waterside boasts a crab club—a rendition of the traditional club but with crab cakes, rather than deli meat, and Old Bay aioli, instead of mayonnaise. Or for a Waterside spin on a familiar appetizer, Chesapeake Nachos—fresh tortilla chips covered with lump crab meat, cheddar and Monterey jack cheeses, tomatoes, green onion, roasted peppers and Tomatillo salsa.
Mr. Gould believes what guests will enjoy is not only the outdoor, lakeside dining, but the walking path around the lake, fire pit with great vistas, and its casual seating along the lakeside path. Entertainment will be provided on select evenings with local musicians, and the restaurant's location provides great views of live music across the lake put on by Rio. Mr. Gould also points out that Waterside is located away from the crowds of the Rio complex, offering a no-wait dinner option with plenty of convenient parking.
Prior to joining the Gaithersburg Marriott Washingtonian Center, Mr. Gould was executive sous chef at the Baltimore Marriott Waterfront Hotel beginning in 2007. He was promoted to that position from senior sous chef, where he began in 2006. Mr. Gould focused on increasing customer satisfaction with the wait staff service, and managed all food operations, including banquet and events.
From 2004 to 2006, Mr. Gould was sous chef at the Hilton Head Marriott Golf & Beach Resort. There he oversaw all food operations in five outlets, and created menus for each of them. Mr. Gould began his culinary career as restaurant manager and sous chef at Spartanburg Marriott at Renaissance Park beginning in 2003. Mr. Gould received his culinary education from Johnson and Whales University.
