
Nahualli Trading Company, master crafter of Chocolate Seeds, will be featured at BugFest 2010, Saturday, September 11, at the North Carolina Museum of Natural Sciences in Raleigh, N.C.
Nahualli Trading Co. owner Paul Mosca will pan super worms in dark chocolate during the event, which will be held from 9:00 am to 7:00 pm. The panning technique is an ancient art of chocolate coating in which the center -- in this case, a worm -- is slowly and continuously coated with chocolate hand ladled into a revolving bowl. This continuous, methodical application results in an evenly and well coated center; i.e. worm. In 2009, Mosca panned more than 4,000 worms at the museum's BugFest.
Nahualli Trading Company's panning display, at which Mosca will provide samples of the chocolate panned worms, will be located on the second floor of the museum.
Mosca, who recently contracted with organic cocoa bean farmers in Ecuador, is also now customizing bean-to-bar chocolates for local chocolate makers and restaurants, including Dolly Mama's in Allentown, Pa., Zely & Ritz in Raleigh, and the French Broad Chocolate Lounge in Asheville, N.C.
