Dealcoholizing technology developed in Germany has attracted the attention of a group of craft beer brewers near San Diego, Calif. The brewers have teamed up and commissioned a dealcoholizing plant with SIGMATEC technology from API Heat Transfer, headquartered in Buffalo, N.Y.
The new technology produces beer with an adjustable final alcohol content of 0.0% to 0.4% at a capacity of 2.5 to 4.2 barrels per hour using vacuum rectification technology with options for integrated and separate aroma recovery, inlet beer dosing, brewing water dosing and a standalone clean-in-place unit.
The removed alcohol can also be concentrated up to 80% volume, if required.
Karl Heinz Sautner, a spokesperson for API Heat Transfer, said, "The California brewers selected SIGMATEC technology due to its high standards of flavor profile recovery, hygiene, flexible control, construction techniques and production volumes."
The plant will begin operation at the end of 2017. Planning for further plant installations are underway.
The SIGMATEC dealcoholization system is used in more than 100 plants around the world. Among its appeal is the patented Aroma Recovery Unit, where aroma components are recovered and redirected into the wine/beer. The alcohol-rich vapors are condensed, cooled to a low temperature, and stored in a tank in the form of industrial alcohol. The result is a saleable product, which can be marketed immediately.
SIGMATEC plants have capacities ranging from 2.5 to 170 barrels per hour. The technology is environmentally friendly and adaptable for various products and formulations.
